My quiche obsession continues with this Mexican quiche. I like having a prepared quiche because it is so easy to warm up in the microwave.

Prosciutto makes a great crispy crust for these mini quiche eggs and the mascarpone that’s added to the eggs makes the quiche super creamy.

This quiche has a great flaky crust. I also like to use Swiss cheese, Gouda, or Havarti cheese with this!
