I stumbled upon this recipe, and it caught my eye. Firstly, it's a recipe for one single cookie, which is pretty cool. Secondly, you can bake it in the microwave! I've made a bunch of mug cakes before, so I was wondering if this was a mug cookie. Well, technically, there's no mug involved, but it's the same process!
I find it fascinating that there are countless variations of this recipe. The four variations mentioned are just the beginning. You can customize it by adding the zest of any citrus fruit or experimenting with different extracts. Additionally, you can mix in various baking chips or nuts to create unique flavors. The possibilities are endless.
I decided to be brave and give a 90-second keto cookie a try, even though I struggle with baking.
I watched the video, read the recipe, and reviews. People were raving about the cookie, so I gathered the ingredients and mixed everything.
I didn’t like that the sweetener was 1/2 tablespoon though! What the heck is that? Ha! I actually do know a tablespoon is three teaspoons so am I supposed to do 1 teaspoon and 1/2 teaspoon. That is far too much math calculation going on there. Also, is there even 1/8 of a teaspoon on the measuring spoon ring? I don’t even know; I couldn’t read the spoons! So I just guessed on both of those and this is a prime example, why I am keto-baking challenged. I am not precise! But other than that. It was all good.
I decided I didn’t want the gingerbread one, so I did a white chocolate pistachio macadamia nut one. I also added some chopped pecans to the chocolate chip one. See how you can change this recipe to whatever you like! One other tip, no matter how hard it is to wait, I do not attempt to eat this cookie before it cools completely! It will fall apart! I’m not going to say how I know that! 😊
I did make the four variations and decided the 90 seconds was a little too long in my microwave. At 90 seconds, the cookie spread way out and became too hard. I ended up with 75 seconds being perfect, so you might need to adjust the time depending on your microwave.
When the cookie had cooled down, I tasted the Nutella one and enjoyed it thoroughly. However, I did not make my own Nutella and instead bought the Choc Zero Nutella, which was also delicious. However, it is high in carbs, so one needs to be careful while consuming it. It can be used to enhance the taste of many recipes. If you make your own Nutella, the recipe is available on the same site as the cookie recipe, and it will save you carbs. Though I didn't want to make more cookies, if you make your own Nutella, you could use it for making more cookies!
Oh, I forgot to give my review of how the cookie tasted! Like I said, I just tried the Nutella one because it fell apart when I tried to pick it up too soon, and I had to make another one! I’ll taste the others later today and do an update. I was just too tired to taste. But I did like it. I would say it was “good.” On a keto cookie scale of 1-10, I would rate the Nutella 90-second cookie a 7.5😊🍪
The carb count is listed at 4,1. I don’t think that is that bad considering it’s a nice-size cookie. However the chocolate chips in the recipe are listed as optional. So I’m thinking possibly they aren’t included in the carb count. Not sure. Personally, I’m going to have one cookie and say it’s 6 carbs and not worry about it that much.
Anyway, this was kind of fun in a not so fun way! I’m kidding! (Remember, I made all four because I’m an over achiever! You can make ONE! Not too much of an investment there!) I love to experiment, be a keto pioneer, and try new things! I hope you will be one too! Happy Almost Valentine’s Day! 🩷

I have officially tried all the flavors now and I particularly liked the chocolate with the chocolate chips, the chocolate chip was good, and the white chocolate one was very good too. I made the Nutella one first because I thought I would like it the best. It was still good though. I also cooked them at varying times, from 60 seconds to 90 seconds. I would recommend somewhere in between those two times. But it just depends on your microwave. They also can be baked in the oven. The cookies spread more and get harder at 90 seconds. 🍪
