I also used a silicone mat, and it came up very easily. I think a plate is more difficult, but it works. I did let it cool on a small metal rack, as he suggested. I think these would work great for enchiladas or fajitas! Have to try this! On a side note, I added some seasoning salt to the recipe, and in the first one that I made, I forgot the whey protein! I think I like it better without it! I like a very thin tortilla, and it was a little thick, so maybe a little more cream would have made it thinner. I still have to experiment!
8-29-23 Update
I did some more experimenting with the recipe. I added a little extra cream, around 1/2 to 1 teaspoon, to make the crepes thinner. Also, I didn't use all the batter in one go and made sure to spread it evenly. This helped me avoid the thickening of the crepe in the center. I'll be using them to make enchiladas tomorrow night and will give you an update soon. 😊"

I did try this with psyllium powder, no protein, and raw almond flour. (It did not turn purple, but it is a bit chewy.) I will certainly try it again, maybe I can find whole psyllium husk locally.
