I saw these on Instagram and HAD to make them. Even though I’m keto-baking challenged, these came out pretty amazing! It's not precisely as flaky as a true croissant, but just a delicious, sweet little roll. I also baked some plain cookies without the almond paste, which also came out good! They could be used with some tuna salad or at breakfast or whatever sounds good. The one thing I will do differently next time is brush with a bit more butter before baking. I hope you will try these and enjoy them!
Make sure to pinch the ends so the almond paste doesn’t leak out!
