What a great sheet-pan meal with delicious Greek flavors! I've made it as written a few times before. But tonight, I didn't have cucumbers or feta, so I skipped the tzatziki and substituted herbed goat cheese for the feta. I also used half the cinnamon called for. It was spectacular! I baked it for 35 minutes and then broiled it for a couple of minutes. Oh, and I used light purple Japanese eggplants.
If you make it, you might double-check the macros to ensure it fits you. Sometimes, I have to adjust the serving size on Diet Doctor recipes.
