Omelets CAN be prepared in advance and microwaved at breakfast time. I use 3 large eggs, beat 150 times, add 2 TB water, beat an additional 50 times, and split into 2 cheese omelets. And I split the omelets in half once cooked for a total of 4 omelets with the 3 eggs.
I prepare bacon (or the protein of your choice) in advance and save the bacon fat to sauté my red/green peppers and mushrooms mixture, also prepared in advance (I just added red onion after 30 days without for newbies)
7 days' worth of breakfasts that take 1.5 minutes in the microwave.
I work odd hours so I'm up at 2:30 am. This breakfast keeps me full until lunchtime at 9:30 am.
