I 🩷 Arby’s! Haven’t had one in a LONG time though! Saw this recipe for a keto copycat roast beef sandwich and of course, had to make it! It also made it a must because it’s on an onion bun chaffle! 😲 I remember loving onion buns in my carby days. Of course, I did! So I wanted to replicate my favorite onion bun in chaffle form. I had this great recipe, but I was thinking what about the little crispy onion bits that were always on the top of the onion buns? Those were my favorites! My keto chef brain got to thinking and thinking and I decided to try something a little different.
I fired up the ole Dash mini waffle maker and put a pat of butter in the bottom, then sprinkled it with chopped onion and closed it up! I wanted to see if the chopped onion would caramelize into some onion bits and the Dash mini did not let me down.
Next, I mixed up the chaffle mixture and I put the dried minced onion in there, but I wanted it to taste like an onion bun, not just a cheesy chaffle so I added two teaspoons of psyllium husk. It’s not necessary to do this, but I liked how it turned out. You could also use almond flour, coconut flour, or even some xanthan gum to get a more bread-like texture.
I thought it came out great! This could be used this way with any kind of sandwich and even with hamburgers. The Horsey horseradish sauce was very good too. I just warmed some deli roast beef to complete everything! Very good. I put too much roast beef though to make it look pretty. A little less would have been better.
