"Assertive Greens" are green leafy veggies that tend to be bitter and tough, and include Kale, Collard Greens, Mustard Greens, and Turnip Greens. Spinach is not considered an assertive green, and this recipe is not a recipe for cooking spinach.
Assertive greens do not do well with steaming or microwaving. Blanching is used to tenderize and neutralize the bitterness of the leaves. Once blanched, the greens can be kept in the refrigerator for three or four days, or frozen for a month or so. Blanching is the first of two steps. The second step is cooking the greens for serving.
