Keto Avocado Eggrolls

Whenever I went to the Cheesecake Factory (before Virta) I had to order these eggrolls! But now I have figured out a way to make them keto!


Use a low-carb tortilla of choice; I used Mr. Tortilla (3 carbs each), put the filling in them, and baked them in the air fryer. Frying in oil would probably work great too!


I also subbed the Roma tomatoes with sun-dried tomatoes. You can make the cilantro dipping sauce, or I just used some G Hughes Sweet Chili sauce with some cashews or nuts sprinkled on top! Very yummy!

Update: I’ve changed the recipe a bit; I used a different tortilla. I like the Mama Lupe tortillas. They are on the Virta-approved list. They are ten carbs apiece, so you do have to watch how many you eat, but this is a very occasional thing so I will have just one tortilla cut in half. You can fry them, but I roll them up and spray them with olive oil cooking spray to fry in the air fryer. Much easier. I also don’t try to roll up the sides like an eggroll. You need a thinner eggroll wrapper to do that, so I roll them up with a tortilla like an enchilada.


I also made a new dipping sauce. Previously, I used G Hughes Sweet Chili Sauce with chopped peanuts sprinkled on top for the dipping sauce. This time I made the copycat cilantro sauce. Very good! I just substituted the honey with a little stevia glycerite. Stevia glycerite is supposed to be less bitter than regular stevia and is thicker, more like honey.

Here is the Stevia Glycerite that I use in the place of honey. Just about zero carbs.







This Choc Zero honey substitute is also good, but it has a lot more carbs and more of a honey taste. I use a very small amount, so the carb impact isn’t that much. And it’s hard to resist the cute honey bear bottle! 🍯
