This is a take on the viral pasta Feta recipe, but it’s made with Spaghetti Squash and Boursin Cheese instead! I’ve made the Feta Pasta version before. So basically, it's very similar, but this is great with the Spaghetti Squash and Boursin!
The carb count depends on how much of the ingredients you use and eat. Makes sense, right! One cup of Spaghetti Squash is seven carbs, 5 ounces of grape tomatoes is three carbs, Boursin Cheese is five carbs for the whole box, and Balsamic Glaze (I used the Rachel Ray brand) was eight carbs per Tablespoon, and I used one teaspoon drizzled on the top.
I used this brand and flavor of the Boursin cheese from Walmart.
Here’s the scoop on Rachael Ray’s Balsamic Glaze. Just a very small amount adds a lot of flavor and looks pretty!
You could eat a smaller portion for a side dish with some protein or make this a meatless meal. This was super yummy! 😊
