I‘ve never made Beef Wellington or ever eaten it either, so when my son asked for it for his birthday I was filled with trepidation and spine-tingling fear! Ha! I must say this was a project and I’m glad I can cross Beef Wellington off my bucket list!
If you want something different and very fancy and you don’t mind a more complicated recipe you might want to give this a try. Everyone loved it, that’s good because I will NEVER make this again! Ha! I made a carby and keto version. That added to the work. I looked at several recipes for Beef Wellington and they were all keto except for the dough. I used puff pastry for the carby one. One recipe had a caramelized onion layer so I added one to this recipe. I also made a basic cream sauce with some thyme and garlic. I just sautéed a couple of heaping tablespoons of minced garlic in about half a sick of butter. Added one chopped shallot, then poured in about a cup and a half of heavy cream, then reduced it a bit, and then thickened the sauce with about 1/4 teaspoon of xanthan gum. Sprinkled about a teaspoon of seasoning salt, pepper, and thyme. It was very good on the Beef Wellington. If you’re brave enough to give this a try I would love to hear about it!

I had some leftover mushroom mixture and made some cream of mushroom soup! Very tasty!
