A delicious omelet with spinach and mushrooms!
This was my day 2 omelet meal.
2 eggs small amount of added cream stirred well.
I sauteéd the mushrooms and spinach in butter and then removed them from the pan.
Add the egg-cream mixture, after it starts to bubble up.
Flip the egg over to cook the other side.
Add the mushroom spinach back.
Add shredded cheese of your choice, as well as your favorite spices and salt.
Fold and cook a few seconds more, perhaps 20 to 30.
Remove to a plate and enjoy!
It's very yummy!
