I love balsamic vinegar and feta cheese, and this salad has both of them, plus bacon! I marinated the chicken in a little of the dressing and fried it in the pan with the leftover bacon grease, and it came out so good. I used chicken breast for this, but you can also use chicken thighs. I substituted the honey with several spoonfuls of brown sugar Monk Fruit. Any sweetener will work, though. You’ve got to try this great salad!
