I recently cooked bok choy for the first time, and I must admit, I loved it! I regret not trying it earlier. Bok choy is a low-carb, leafy vegetable packed with nutrients and known as Chinese cabbage. You can stir-fry or roast it, and the stalk can be used raw as a delicious dipping snack. It's a great complement to tuna salad. I will definitely make this dish again!
I didn’t really have a recipe. I just washed and chopped a whole head of Bok choy. Keep the white stalk part separate from the leaves. I cooked several slices of bacon, removed that from the pan, then added the white stalks and cooked them first for a few minutes. I buy this crunchy garlic on Amazon that I put in so many things. I used a very small amount, a heaping teaspoon, and added that to the bok choy. The crunchy garlic adds so much flavor and is only about one carb. You could also substitute minced or powdered garlic if you like. I then added the chopped leaves and sautéed everything for about a minute. I sprinkled it with seasoning salt and added the chopped bacon back in. I really liked this, and it would be great with some shrimp added for another stir-fry flavor. I served it with baked salmon and mashed cauliflower. Very yummy!
I’ve tried several crunchy garlic, and this brand is my favorite. You can put it on or in just about anything. I use it in stir-fries, eggs, sauces, and low-carb noodles. It’s good on so much. It’s not that hot, and it mainly adds a great flavor. I wish some ingredients were a little different, but one teaspoon is less than one carb, and you need such a small amount I don’t worry about it too much.
It is a bit pricey, but it packs such a flavorful punch I splurge and buy six jars at a time to get the best price. I have looked all over trying to find it less expensive, but I think this is the best way to buy it. A jar costs about $9, so buying the six jars saves almost $2.50 per jar! I put this in my family’s Christmas stockings sometimes. They love it!

Hi Denise - the chili oil- have you tried the Trader Joe’s one? Is it similar? I like the TJ one but it is more carby… thx!
