This dish reminded me of the Copycat Chicken Bryan recipe here on virtaworks. This was my favorite dish at Carrabba’s restaurant, which wasn’t pasta! So this Boursin Stuffed Chicken is similar, but it’s stuffed with creamy Boursin and mozzarella and wrapped in prosciutto or bacon. Because I love the Chicken Bryan so much I had to add some strips of sun-dried tomatoes to this recipe. I usually change recipes somehow! The sun-dried tomatoes add such great flavor and I used the garlic and herb Boursin cheese. This would be a great dish for Easter if you want to do something different than ham!
