Breakfast Burrito with Low Carb Tortilla

These can be made ahead of time, just wrap them in foil or plastic wrap!

Use the low-carb tortilla of your choice. I made the tortilla in the photo.

But you can use any low-carb tortilla like Mama Lupe’s or Mr. Tortilla's. For each tortilla, scramble two eggs with a splash of cream, salt, and pepper or seasoning salt. I like to add jalapeños, Mexican Blend cheese, sometimes onion, and green pepper. You can also add bacon, sausage, or chorizo inside the burrito or serve it on the side. If you like, try sour cream, salsa, cilantro, and avocado as toppings.
