Roll up some bacon and stuff them with eggs! A handy way to serve bacon and eggs! These can also be made ahead and just warmed up the next day.
I made two scrambled eggs for every three slices of bacon.
So scramble however many eggs you want and add any seasoning or veggies. I added chopped jalapeños. Set the eggs aside once done.
I baked the bacon on a cookie sheet for about ten minutes to start the cooking process. Cook until about halfway done and still able to roll.
Lay three slices of bacon side by side and sprinkle with your cheese of choice. I used a Mexican blend. Then scoop the scrambled eggs on top and roll up. Make sure you roll them tight and compact! Place the bacon in a skillet on medium heat and finish cooking it! I served them some salsa.*
*Traditional salsa is a select food, but you can try your own with zucchini, green onion, and celery with a squeeze of lime juice!
