Low-carb Breakfast Delight: Keto Sliders

Plus A Ham Slider with Blueberry Jam

Shared by DeniseM

Breakfast sliders two ways, one sort of traditional and the other a little more gourmet!😃 I used the great dinner rolls recipe I found on the Cast Iron Keto website long ago. These rolls are so good that they could probably fool someone into thinking they are carby wheat rolls. They remind me of the Sister Shubert rolls you get in the grocery store's frozen section. Add a little low-carb sweetener and a minimal pineapple extract if you want them more like Sweet Hawaiian Rolls. I’ll describe below how I used these great rolls to make these breakfast sliders.

Basic Keto Breakfast Sliders

These are the basic breakfast sandwiches you’ve seen many times, but they are even more delicious on these rolls and baked. You can also make them any way you like.

I used two soft scrambled eggs with salt and pepper and a splash of cream. Ensure you do not overcook them because they will bake in the air fryer. I didn’t use all the eggs; one would probably work for two sliders.

You can choose whatever protein you like. Bacon, ham, sausage patties, whatever sounds good. I used some jalapeno cheddar sausage by Eckrich, which is super good.

Then, choose your cheese of choice. I used some American Cheese, which is not the best option, but I used it because it melts easily and quickly. It’s fake cheese and has two carbs per slice. Regular cheddar cheese is zero-carb and certainly can be used. It would just take a couple more minutes to melt.

Then, mix your low-carb maple syrup of choice with melted butter. I like Walden Farms Pancake Syrup because it has zero carbs and calories.

I made two sliders by splitting the rolls in half and placing the bottoms in a small baking dish. Put a scoop of scrambled eggs on the bottom, then two slices of jalapeño cheddar sausage, then I folded the cheese in quarters and placed it on top of the sausage. Put the roll top back on. Pour the melted butter and syrup over the top and bake in the air fryer at 300 degrees for about 5 minutes or until the cheese melts. 😊

Ham and Cheese Sliders with Blueberry Jam I had some leftover homemade blueberry jam, which was handy but very easy to make. Just boil some blueberries in a saucepan with a small amount of water until the blueberries are soft. Remove from heat and stir to mash the berries. You might not need a sweetener if your berries are sweet enough, but I added a very small amount of stevia.

I made two sliders again. Split the rolls in half and place them in a small baking dish. Next, put two folded pieces of sliced ham on the bottom of the roll. I folded these in quarters. Next, your cheese of choice is folded in quarters. I used Havarti—next, add a dollop of blueberry jam. Then, put a tablespoon of herb and garlic Boursin cheese spread on the top of the roll and place the top back on. Then, put that half on top of the bottom half of the roll.

In a microwave, melt a couple of tablespoons of butter or more if making more rolls. Add a few sprinkles of parsley, minced garlic, about half a teaspoon of Dijon mustard, and a small splash of Worcestershire sauce to the melted butter. Mix.

Pour the melted butter mixture over the rolls and bake in the air fryer or oven at 300 degrees for about 5 minutes or until the cheese is melted.

Enjoy! Both of these sliders were so good! 😃
