I made this yummy risotto but left out the broccoli because I had enough veggies. I also used a Colby-cheddar cheese blend because I already used parmesan cheese in the chicken I was making. I replaced some of the cream with chicken broth to save on calories, but I bet it’s great with all the cream! I like to cook cauliflower longer to make it less crunchy. I think it tastes more like carby rice. It's a great side dish! 🍚
