I saw these Cabbage Hash Browns on Instagram, but there was no written recipe and he did not verbally give all the quantities, so just use what you think best. I doubled the recipe so I’ll list the approximate amounts I used. I also added some chopped jalapeño which was not in the original recipe. I used the skillet where I had cooked some bacon and had leftover bacon grease, but olive oil, butter, or a combination of the two would work well. I think they would also do great in a waffle maker! Garnish with green onion and/or sour cream if you like.
Cabbage Hash Browns
4 cups shredded cabbage
4 eggs
1/2 chopped onion
1 chopped jalapeño (optional)
1/2 cup or to taste Parmesan cheese
4-5 slices Gouda cheese chopped
1-2 teaspoons seasoning salt
1 teaspoon pepper
1-2 teaspoons garlic powder to taste
Mix well and drop a large spoonful into a skillet with the oil of choice on medium-high. Flatten the spoonful of cabbage mixture. Cook for about two minutes on each side. Garnish with green onion and sour cream.
