Cooking with poblano peppers offers a multitude of benefits. These flavorful peppers add a mild, earthy heat to dishes without being overpowering. They are also rich in vitamins A and C and antioxidants. When roasted and stuffed, they become a visually appealing meal. So when I saw this recipe for stuffing poblano peppers with shrimp, I had to try it! But as you make this, watch the roasting time on the poblanos—mine deflated!
