Asparagus is one of my favorite vegetables, and this recipe takes it to a whole new level by creating a beautiful presentation. To reduce the carb content, I use only half the amount of tomatoes and less than half the balsamic glaze suggested in the recipe. I purchased the balsamic glaze from Walmart, but you can easily make it at home by reducing balsamic vinegar in a saucepan on a simmer. The balsamic glaze is slightly high in carbs, with about 8 carbs per tablespoon, so I drizzle it on the dish sparingly. You can also make this recipe entirely on one sheet pan. The combination of mozzarella cheese and fresh basil makes it even more flavorful.
