I saw the Keto Twins make these Carnivore Mashed Potatoes, and to be a carnivore, there isn’t a potato within a 50-mile radius of this recipe! So what exactly was being mashed then? Are you sitting down? Egg Whites! 😳 Yes, I said it, and through some voodoo magic, the recipe‘s creator, Chris Cooking Nashville, on YouTube, turned egg whites into something that I would bet money would fool someone into thinking they were eating potatoes.

Now, are they EXACTLY like mashed potatoes? The jury is still out on that one. It’s been so long since I’ve had potatoes I’ve almost forgotten what they taste like. But it’s safe to say if I think most people would be fooled, you know they have to be VERY close. They might even be better! I happened to have most of the ingredients already. If you don’t have most of the ingredients, it could be slightly expensive to make these, but they are so good once you’ve made the initial purchases they will last a long time because not that much is used of the expensive ingredients. They will also work on other recipes. This recipe is so good and wasn’t that difficult to make. I bet you will want to make it over and over. This is also much lower in carbs than mashed cauliflower rice so you can have more! đŸ‘đŸŒ

Don’t they look AMAZING!😳 Make sure to dip in the melted butter. It makes it even better!

7-16-23 Uplate: These did not reheat well, so I added heavy cream. They had turned into potato jello! So I mixed it well. Putting it back in the blender would work well, but I had a small amount left over. Then, after mixing it, I put it in the microwave, and they came out perfect again! I used the leftover carnivore potatoes for pierogi filling and added some Mexican blend cheese and a little parmesan. Oh wow! So good. I KNOW this would fool anyone into thinking they were carby potatoes. All for almost zero carbs! đŸ˜±

Here are a couple of photos of the egg white cooking stages. The most important thing to remember is to cook them slowly and on low heat. Also, keep stirring. You don’t want them to brown at all.

I still cooked the egg whites a little longer after this. You want almost all liquid to be gone. I forgot to take a photo of the final cooking stage! Sorry!

Here is the link for the beef gelatin I used. There are so many uses and health benefits of gelatin! 🐄

Here is the link for the egg white powder I use. I’ve used it in several recipes! đŸ„š
