Crispy Keto Taquitos

I saw this recipe for Carnivore Taquitos after buying my newest appliance. (I needed another appliance!😳) So I thought this recipe would be perfect to try out. It did not disappoint!




I took the batter recipe and mixed some rotisserie chicken with some salsa verde sauce (red salsa would work also) as I was pressed for time. You could do taco meat and cheese, shrimp, pork, anything you like. The salsa verde and chicken worked great, and I mixed it with some Fiesta Blend Mexican cheese.


Take about a tablespoon and a half of batter and pour it onto a waffle cone maker. I used the Proctor Silex one, and it does well. It makes everything very thin so it will be crispy. You don’t want this to get too crispy because it will crumble when rolling it up. I know that from experience! I cooked the Taquito batter for 2-3 minutes. Then removed it, filled it with the chicken mixture, and rolled it up as tightly as possible. I made three batter recipes and that made about 6-7 Taquitos. I ran out of chicken mixture, so I made one with cheese and one with leftover avocado. Both were very good dipped in the salsa. I then put the Taquitos in an aluminum pan sprayed with cooking spray and baked them at 350 degrees for about 5-6 minutes. Just keep checking them. You want them crispy but not too brown. And that’s it!

They turned out so good, and the possibilities are endless for what you could use this batter for! Egg rolls, Spring Rolls, Fried Shrimp, Cream Cheese Won Tons, Crispy Burritos, and even sweet things! 😊 (Also newbie approved!)
