Keto Catfish Lafitte

I saw this recipe for Catfish Lafitte possibly 20 years ago in Southern Living magazine, and the article said this was the author John Grisham’s favorite meal. I love his books, so I had to make it, and I could see why he liked the dish so much. That was 20 years ago, and things are different, so the recipe needed to be keto-fied!

Instead of dusting the catfish in flour, I did it two ways. One way I used blackening spices and the other way I used pork panko, dipping the seasoned catfish in egg, then the pork panko, then pan frying in some olive oil. I liked both ways, so it’s just a personal preference of how you want to go. I made the sauce basically as the recipe describes except I used all heavy cream, I substituted Sherry for the Vermouth. Who has Vermouth? And I didn't add the lemon, but you certainly can do that!
