I love this dish because it doubles as stuffing and a veggie. It makes a beautiful presentation and looks so festive and colorful on a Thanksgiving plate or any dinner plate! I substitute the wild rice with cooked cauliflower rice and omit the apple. Some chunks of zucchini would mimic the texture of the apple. For Thanksgiving, I do use dried cranberries. This does add a few more carbs, but it’s Thanksgiving!
