I decided to break out the chaffle bowl maker and make some taco bowls! I deviated a little from the taco bowl recipe and used two tablespoons of egg whites instead of the whole eggs. I wanted a very crispy taco bowl. I used finely shredded cheddar cheese and subbed the baking powder with 1/2 teaspoon of xanthan gum. I thought this would make a crispier taco bowl, and it really did. VERY crispy!
I also added some Spanish cauliflower rice by Bird’s Eye. It is so good that I add only seasoning salt, and pepper. Then I put it in the bottom of the bowl and top it with the taco meat mixture, sliced lettuce, sour cream, tomato, and chopped cilantro. SO good! 🌮😊🌶️
I used this chaffle bowl maker; it's another fun way to make chaffles. I’d like to make some sweet chaffle bowls to serve ice cream in!🍧
