I ketofied this Pioneer Woman recipe. It was AMAZING!
I followed the recipe exactly except for the paccheri pasta, I used Palmini lasagna sheets instead. I put a dollop of the pesto ricotta cheese mixture in the middle of a Palmini lasagna noodle sheet and rolled it up then stood them all up in the pan. It worked perfectly! I boiled the lasagna noodles for several minutes to make them much softer. Give this a try! I think I could eat this every day it was that good!
