This is SO good! I like to use Green Giant Cauliflower Rice Medley Risotto. It has little bits of mushrooms and asparagus in it. I also like to marinate the chicken in olive oil, fresh garlic, fresh ginger, and soy sauce before cooking it with an egg. Then add it to the sauce and cook the cauliflower rice. Pour sauce over chicken and sauce! Enjoy!
