Keto Chicken Green Chile Soup

This is a light enough soup that you could enjoy year-round and not just in cold weather. I did alter the Kale Me Maybe's recipe quite a bit!



I cooked the soup on top of the stove, and it did not take long to cook. I sautéed the onion in half a stick of butter and added two very finely chopped jalapeños. Also after they cooked for a few minutes, I added some minced garlic. I like it a lot, so just add it to taste If you like. I added the cumin, but I also added about two tablespoons of chili powder. I then poured in the chicken broth and added green chilies (I used roasted Hatch chilies). I also added a jar of salsa verde. I wanted a very intense green chile flavor. I cooked that for a few minutes, and then, to sub the potatoes, I added 2 sliced turnips and one sliced zucchini. These added a lot of flavors, but certainly, you don’t have to follow any of my changes to the recipe! (But it came out super yummy).


I just cooked this long enough for the turnips and zucchini to cook, then tasted it to see if it needed further seasoning. I garnished it with Monterey Jack cheese, Cilantro, and Lime! You could add some low-carb tortilla chips by frying your own or using packaged low-carb chips!
