This dish brings back memories from my childhood. I used to make it while teaching myself how to cook. My family loved it and you can make it in so many ways!
I pound out the chicken very flat and then put whatever filling I want in the center and then fold in the sides, and roll it up. OR you can prepare the chicken per the recipe instructions and make a slit in the chicken breast and insert the filling and then do the breading. (Sometimes, I will add pork rind crumbs to the breading!)
You can do the herb butter as is or add bacon. I like to add some red pepper flakes to it. I’ve also done it with different cheeses and spinach added to the herb butter! Anything you like!
