Before I began Virta and a keto diet, I always ordered Pad Thai at any Thai restaurant! So when I saw this recipe from Kicking Carbs, I had to try it. I’ve made Pad Thai before, but only a keto version. This is the recipe for Chicken Pad Thai I made a couple of years ago, and it was excellent.
This Chicken Pad Thai has some natural peanut butter. I’m thinking, though, that peanut butter is not a traditional Pad Thai ingredient. I do like Asian sauces with peanut butter, so I thought I would give this chicken recipe a try. I liked the peanut butter. I'm unsure if this was Pad Thai, but it was terrific. It was very flavorful, and I made the recipe as directed. I garnished it with fresh cilantro, green onion, and peanuts.
Here is the Crazy Richard’s peanut butter I used. I like it better than Smucker's Natural Peanut Butter because the texture is creamier and not as hard to stir. It also is 100% peanuts, nothing else. There also is a crunchy!
Now, to my favorite part, the pasta! You can use any low-carb noodle that makes you happy. The hearts of palm noodles are delicious, and zucchini zoodles would be good. I have been using these noodles for a few years, and I would say they are my favorite. I used the fettuccine for this Pad Thai recipe. Pictured is the variety pack, but you can buy individual spaghetti, fettuccine, angel hair, or rice. I use all the shapes in so many recipes! I heat them for about 7 minutes in the microwave, after rinsing so they won’t be as chewy, but try these if you are missing pasta! I hope you enjoy them!
Also, here is more information about all the fantastic health benefits of the Konjac/shirataki noodles! They were first created in China centuries ago for medicinal purposes and are very popular in Japanese cuisine today!
For a serving size of 3-1/2 ounces, there are only 4.5 calories and 2g of carbs!! There is some oat powder, but the carb count is so low I have never had a problem with it. One of the health benefits of Konjac noodles is that they help with blood sugar control!
