There's no set recipe for the enchiladas I make. I take whatever low-carb tortilla I have on hand and fill it with cheddar cheese and chopped onion. Sometimes I add chopped jalapeños. Roll them up, place them in a baking dish, and then cover them with chili, then top them with cheddar cheese and bake them covered at 350 degrees until the cheese melts.
This is one of the tortillas I use. You can also use store-bought tortillas like the ones by Mama Lupe or Mr. Tortilla. Those have a few more carbs.
Here is the chiI recipe or you could use low carb enchilada sauce.
