Just a little different twist on traditional deviled eggs!
I made more than this, but just a few with the avocado because I didn’t want the leftovers to turn brown.
I cooked eight hard-boiled eggs. Let cool, then slit in half and remove the yolks to a bowl.
I added three heaping tablespoons of mayo and one small squirt of Dijon mustard, but not much. About three tablespoons of dill pickle relish, a small Tabasco or other hot sauce squirt, and seasoning salt and pepper. Mix all together and pipe into the egg white halves.
Then, to the top, add one piece of avocado. Sprinkle with Trader Joe’s Chili Lime seasoning or Tajin, then top with chopped bacon!
My mixture got a little soupy because all this mustard juice squirted out, so watch that. Make sure you shake your mustard!
