Keto Chipotle Cheddar Snack Mix

My Saturday morning ritual includes watching the Pioneer Woman cooking show. I love her recipes, I wish they were healthier, though. Everyone looks very healthy on her ranch, so possibly working hard on a ranch gives you a full ticket to eat whatever kinds of carbs and sugar you would like!


My mother grew up on a farm, and her grandmother cooked three meals daily with fresh bread, cornbread, three desserts of cakes and pies at dinner, hand-churned ice cream from the cows on the farm, freshly fried fruit from the orchard, pies resting at all times staying warm on top of the wood-fired stove. Several farm workers needed all the carby goodness to maintain the strength and stamina to keep things going. Although my great-grandfather died of a sudden heart attack in his sixties, so possibly the food wasn’t the best after all?🤷‍♀️ So, Ree Drummond, I hope you’re listening. I think you should tone down all the unhealthy carbs and come over from the dark side! 😃 BUT in the meantime, until Ree sees the light, I love to ketofy her recipes and try and save the world.👍🏼



Keto Chipotle Cheddar Snack Mix

I saw her make this Chipotle Cheddar Snack Mix the other day, and of course, every carby snack from Cheetos to Popcorn was used (I’m sure is delicious)!


Now how to make this snack mix keto is the question.

I wanted to keep it very low-carb, so I’ll list the keto snacks I used. I used her recipe for the butter mixture to pour over everything and then bake. I knew the keto snacks would be a bit more fragile because they had no wheat flour to make them withhold a lot of butter and baking. I used half the butter, but I think possibly next time, I’ll try a stick and a half. I didn’t want to drown everything in butter, but what in the world was I thinking as I was typing that?


Ha! I didn’t bake it as long as Ree specified for her unhealthy snack mix. Sorry, Ree! Love you! ❤️ There were Cheese Whisps, which are mainly baked cheese, and I was afraid they would melt! So I baked it in the air fryer for fifteen minutes stirring every 3 to 4 minutes. They withstood the baking perfectly! This turned out pretty good!


If you don’t like spicy, this can be toned down. Just leave out the adobo sauce and chili powder. You could experiment with adding different spices to the butter, like garlic powder, onion powder, etc. Also, a splash of Worcestershire might be good, like the old Chex Snack Mix recipe that’s been around forever. I think some Ranch powder and melted butter would be super good, too. I also sprinkled in a few pecans but didn’t want too many nuts to raise the carbs. But add as much or none as you like. I think this is a work in progress, but this would be a great snack to take to the movies! 🍿 🎥


This is the list of low-carb snacks I used. 😊


Mac’s Salt and Pepper Pork Rinds, (buy your favorite flavor). I took a small serrated knife and cut the larger ones into smaller squares. About three carbs for half the bag. I bought it at Walmart. 🐖

One bag each of Cheese Whisps from Walmart. I chose the Cheddar flavor, four carbs for the entire bag, and the Parmesan one with the same carb count. So eight carbs for the two bags. 🧀

I also used one box of Fat Snax almond flour crackers in the Everything flavor, which is 12 carbs for the whole box. These crackers work well with so many things! 🥯





Then I had to find a Cheetos substitute. I remembered I had some Schoolyard Snacks Cheese puffs, so I used two bags of the Cheddar Cheese flavor and one bag of the Flamin Hot. The Flamin Hot might have been a mistake with the Adobo and Chiki Powder! 😰🌶️


So, three bags at three carbs each equal nine carbs. 😊





Lastly, I just sprinkled a few pecans, maybe 1/2 cup (7.5 carbs), but the quantity is up to you.


So for the large bowl of snack mix, I would say about 40 carbs. Add another couple of carbs for the spices. Now how many servings? I would say at least 10, so 4.2 carbs per serving is the maximum. Enjoy! 🍿🎥
