Chocolate Ice Cream

There is nothing better than homemade ice cream! I don’t use a recipe, but this recipe has everything I use, except the vodka! I have heard that the vodka will prevent the ice cream from getting too hard when frozen, but I never have any vodka to try! I added a couple more eggs and used part stevia to reduce carbs. It is best to cook the cream mixture because of the eggs, but sometimes I chance it as I don’t always have time.

To make vanilla flavor, leave out the chocolate listed in the recipe. Oh, and be sure to taste the sweetness level to make sure it’s sweet enough. After it’s churned, I’ve added chocolate chips, strawberries, and nuts. One time, I added cream cheese to the mixture before freezing and wasn’t that pleased with it for some reason. I was trying to make a strawberry cheesecake flavor. I need to go back to the drawing board on that one!

I found the ice cream maker on QVC for about $35. It’s only 1-1/2 pints, but it doesn’t need to be frozen or use rock salt. Amazon has them, I believe. So get creative and make some yummy Keto ice cream!
