I made some modifications to this cowboy spaghetti recipe to make it low-carb and it turned out super yummy. Instead of kidney beans, I used sliced zucchini and low-carb spaghetti (I have included the link below). Also, I didn't add the 1-1/2 cups of cheese that the recipe called for. I just added cheese on top. I found that it didn't need that much cheese. I like spicy things, so I added two chopped jalapeños, mini sweet peppers, and minced garlic. I also used half ground turkey and half ground chuck. You can adjust the recipe to your liking and add whatever you prefer!
Here is the low-carb pasta I used. It’s my new favorite! I get this It’s Skinny Pasta variety pack that comes with angel hair, spaghetti, fettuccine, and rice and I always use every one of the different kinds of pasta. It’s very easy to prepare, all you have to do is rinse it and add it to whatever recipe you’re making. It is so good, I think maybe, just maybe, it could fool someone into thinking it was just very Al dente carby pasta! It has only two carbs per serving, so very, very low carbs, and only 4.5 calories per package! I use these noodles in stir-fries, casseroles, soups, and so many things!
