Keto Crack Chicken

This is probably the perfect keto dish and took me forever to make! I add some green onion to the chicken mixture along with some chopped jalapeños and broccoli! I also added a little heavy cream to make it a little more saucy to go over cauliflower rice.


Recipe Update: This time, instead of the broccoli, I added mushrooms. I also added some chopped garlic in addition to chopped jalapeños. Some sliced zucchini would be good in this also.









The crack chicken is served over cauliflower rice. To cook the cauliflower rice I tried something different. I had baked the bacon in the oven on a baking sheet for the recipe, so after it was done I removed the bacon from the pan and just added the cauliflower rice on the baking sheet that had some of the bacon drippings, mixed that with the cauliflower rice and seasoned it with seasoning salt and pepper, mixed that together and put a few pats of butter on top and baked the cauliflower rice at 350 degrees for about thirty minutes. I stirred it every ten minutes. This was very easy and saved having to wash a skillet. The rice came out very good and very fluffy!
