I believe that Brussels sprouts are a vegetable that is often misunderstood. I am not entirely sure how I feel about them. While I do not cook Brussels sprouts regularly, I find that they taste pretty good whenever I do make them!
They are very healthy veggies with lots of fiber and antioxidants. It is suitable for disease prevention, too. By consuming a cup full of them daily, you will have exceeded your RDA for vitamin C and vitamin K. All of that in this little mini sprout!
A Synopsis of Three Creamy Brussels Sprouts Recipes
Here are three recipes that I have tried. One of our community members recommended the third recipe. They all have a creamy base and I must say, after covering the Brussels sprouts in some heavy cream, I have become an instant Brussels sprouts fan!
The first recipe is from Keto Karma and uses pancetta instead of bacon. Before the sprouts are added to the pan, garlic and onion are sauteed in butter. Then, the Brussels sprouts are cooked with chicken stock.
The second recipe from Diethood adds some mustard to the cream sauce, plus parmesan cheese! So, the sauce came out extra creamy. She recommends garnishing with red pepper flakes if that is to your taste.
Amy from our community cooked a recipe from CafeDelites. This recipe also uses bacon and cheese in the sauce, as well as parmesan and mozzarella.
For all of these recipes - make sure you brown the Brussels sprouts in the bacon (or pancetta) fat until they get a nice light brown, slightly crispy edge. I added more garlic to the two recipes I recreated. (I always add more garlic!)
