Crispy Keto Chaffle Taco Shells🌮

I made the Chaffle Chips recipe earlier, and they are outstanding, but I prefer something not that cheesy. I think the Whisps cheese crispy is too cheesy! I still like them, but if given a choice, I would choose something with less cheese. I feel the same way about the all-cheese keto taco shells. They are good, but just slightly too cheesy for me.

So I was thinking, what could I do to the chaffle chips to make them less cheesy? I didn’t want to add an egg because I wanted them to stay very thin and not puffy, also crispy, so I thought, what if I just sprinkled some almond flour or coconut flour in with the cheese before putting it on the Dash mini waffle maker? So that’s what I did. I added 1 1/2 teaspoons of coconut flour to one 1/4 cup of Fiesta Blend cheese and then 1 1/2 teaspoons of almond flour to 1/4 cup of Fiesta Blend cheese. Both came out exceptionally well! I liked them much better than the all-cheese version!


Then I thought, what if I added some seasoning to this? I had a bottle of Smoky Cheesy Jalapeño seasoning by Pork King Good sitting right there, so that’s what I used, but any favorite seasoning would work. I sprinkled a little on top, mixed everything, and put the mixture on the Dash mini. Then, after they had cooked for about 2-3 minutes, I flipped them over and cooked for another 30 seconds; I placed them over a wooden spoon to cool in a taco shape. They seem very crispy and I think perfect for a small taco. The flours do add a little more to the carb count. Coconut flour is more than almond flour and can brown faster, so I would probably use almond flour. It only adds one carb, and the coconut flour would add 2-3! I’ll make the tacos later and give an update! 🌮
