These Feta Fried Eggs are trending on TikTok right now, so of course I had to make them! I must say they are very, very good!
The basic technique for this recipe is to make a circle of feta cheese in a skillet and then make a hole in it for a cracked egg. When the feta is crispy scoop it out and place it on a low-carb tortilla, a piece of toasted keto bread, or a chaffle. Then spread some smashed avocado on whatever you choose, then top with the egg.

The recipe has a few more steps, but those are the main things to do. I used a Mr. Tortilla, Pico de Gallo flavor tortilla at 3 carbs. It tasted super good with the crispy feta eggs and guacamole. The carbs would be about 10-11 grams for my meal, but depending on what you choose to put everything on, the carbs may vary up or down. There are ways to cut the carbs. Use a chaffle and use a very small amount of avocado. I used a whole avocado on three eggs, that’s 12 carbs for the avocado right there. Half would have worked just fine. I also topped it with sautéed red onion. I didn’t pickle it like the recipe instructed. Using just a very small amount of onions will keep the carbs down too.
You could get the carbs down to about 7 grams if you use less avocado and use a chaffle. I usually eat only one meal a day, so I can do a little more at a meal, but I only ate 1-1/2 of the eggs. They were very filling and oh so good!😊
Here are some of the steps. The first one is to put the circles of feta cheese In the skillet on medium-low heat. Adjust the circle to fit whatever you are using to put the eggs on. Then make a hole in the center and cook for a few minutes until the feta gets melty and starts to crisp.

Then crack the eggs in the holes. I cooked them just until the whites were done, but I wanted the yolk still runny. Sprinkle with dried oregano and red pepper flakes.
