I love a jalapeño popper ANYTHING, so when I saw this chaffle recipe, I had to make it. The only thing is I don't make it exactly like the recipe is written!
I put the cream cheese in the egg and shredded cheese mixture plus a heaping tablespoon of almond flour. I think it gives it a more bread-like consistency. I like to chop the jalapenos also, but the slices certainly work. I also add seasoning salt. Occasionally I will add bacon to the mixture and that comes out good, too!
Chaffles are very good at allowing experimentation, so make it however you think would make your chaffle taste good. Sprinkle a little bit of cheese (I used mozzarella) on the waffle maker first, then the batter, then a final sprinkle on top and you will have a nice crispy chaffle. These are great with butter fresh out of the waffle maker or cream cheese or used for sandwiches 🧇
