I made this quesadilla with all the ingredients in my food log. I put half the cheese on the bottom of the tortilla; then I added the warmed deli roast beef, sautéed and seasoned mushrooms, sliced green pepper, sliced red onion, half a jalapeño chopped, and then cooked together for just a couple of minutes. (The jalapeño makes it a Dallas Cheesesteak, Philly!🌶️)
I then added the remaining Fiesta Blend cheese with the other tortilla on top. Microwave on a plate for about 30-60 seconds so the cheese is almost melted before the quesadilla gets too browned.
This quesadilla I just finished cooking would taste amazing with some salsa, sour cream, and guacamole on the side! It's one of the best things I've had in a while, but definitely a treat that I won't have often. Even non-keto people will enjoy it! 😊 I must admit, I didn't have much time to make it look pretty, so presentation-wise it's not the best, but I was so hungry that I didn't mind at all! 😃
I don‘t use manufactured tortillas very often because they are a bit carby and, most of the time, contain some wheat, but Mama Lupe’s tortillas that I used are in the Virta Resource Center as an approved tortilla. I have been buying Mama Lupe's for a few years now and they are very good. You just need to test before and after to make sure they are OK, also check with your coach to make sure you are at the proper stage of treatment to have them. You also will have to adjust your macros with 1-2 lower-carb meals for the day because they are ten carbs apiece. Eating only half would also be plenty for a meal.
