Easy Peasy Keto Gyros

My sweet, sweet cousin Craig LOVED gyros! While he was sick with cancer, at the age of 22, I had Wednesdays off from work and I would take him a gyro sandwich from our local mall. He loved gyros (pronounced YEE-rows) and clothes shopping. Bless his precious heart, so this gyro recipe and blog post are in his honor! 💞


Gyros are warm, juicy sandwiches with amazing Greek flavors wrapped in a pita or flatbread. Uh, Oh, let’s put the breaks on right there. A gyro is keto, except for that pesky bread detail! But this recipe from Bobby's Kozy Kitchen has an answer, and so do I on what to do about the bread and still stay keto.



I first made the tzatziki sauce and let it chill in the fridge. Then, I chopped the tomatoes, red onion, parsley, and dill. I saved the dill for garnish and let that chill also. Then, I mixed the meat mixture. I did add one pound of pork sausage. I added the meat mixture to two loaf pans instead of making meatballs. I’m sure the meatballs would be great, though! I baked this at 350 degrees for about 30 minutes or until done.



When I took it out of the oven I let the two loaves rest a few minutes before slicing. This turned out super yummy!



Bobbi gives a link to her flatbread recipe, which looks delicious and I will try to make one of these days. Actually, I probably won’t! Ha! I am all about trying to make things as easy as possible any more. I had been experimenting with this great wheat-free, gluten-free, certified keto bread mix by Fox Hill Kitchens. I had leftover batter and decided to make a pita with it. It turned out very good and was perfect as a pita replacement with only about 4 carbs!







Put the tortillas in a dry skillet and cook for about a minute on each side. This changes the texture and makes them more sturdy



Then assemble: gyro meat first, then tzatziki sauce, then chopped tomato and red onion, then feta, and finally, dill!
