Today, I wasn’t in a baking mood; instead, I was in a chocolate-dipping mood! And creating these Valentine-themed cookies was super easy!

First, Melt Chocolate

I melted some sugar-free Lily’s white chocolate. When you melt the chocolate in a microwave, do so at about 15-second intervals. If the chocolate gets too hot, it will seize, and it’s almost impossible to use afterward. I also used a little coconut oil to thin it, but you could use melted butter, too. A couple of red food coloring drops made the chocolate a nice pink color.

Second, Dip Your Keto Cookies into the Chocolate

I had two keto cookies ready to go! I had some leftover Choc Zero Butter cookies from Christmas, and I thought they would taste great dipped in chocolate. Additionally, I used Catalina Crunch Vanilla Creme Sandwich cookies. Both cookies tasted delicious when dipped in chocolate. To save on carbs, I dipped only half of each cookie in the chocolate.

Third, Add Sprinkles!

There is a great company called The Sprinkle Company on Etsy, and they make all kinds of keto, vegan, sugar-free sprinkles. Sprinkles make everything look so festive!

If you don't want to splurge, you can make sprinkles by dying some granular sugar-free sweetener with a few drops of red food coloring. This is very easy to do and doesn’t cost much.

Last, Prepare a Parchment-lined Baking Sheet

Add your decorated cookies to the sheet and bake at a low temperature until the sprinkles start to melt and the chocolate gels. Not too long as you don't want to burn the already cooked cookies.

  • Lily's White Chocolate Style Baking Chips

  • Choc Zero white chocolate chips.

Choc Zero Butter Cookies

These are the lowest in carbs at three carbs apiece and I just love them. They come in several shapes and are in a great tin to keep them fresh. I will have one for a treat every once in a while. I had this can of cookies for the whole month of December, January, and now into February. Not too bad!

Catalina Crunch, the Vanilla Creme Sandwich Cookie

These are leftovers from Christmas also. ( Can you say Woman of Steel? 😂) I used them to make a crust for a special Christmas dessert. They are NOT something I recommend to have very often at all. They are six carbs with not-so-great ingredients, but after 6 years on keto, one of these cookies is not going to kill me. You just have to be careful with them! It might be the best idea just to use the Butter Cookies!

Happy Valentine’s Day!💕
