Egg Bites

A great make-ahead breakfast for busy mornings!


This is a really fun breakfast to make! I start by cooking any protein I like.

  • Protein choices: Sausage, bacon, ham, pepperoni. anything that sounds good.


Then I cook some veggies. Veggies are optional, but it’s a good way to add some healthy veggies.

  • Veggie choices: Sautéed spinach, onion, peppers, jalapeños, anything you like.


Then choose your favorite sauces and cheese.

  • Sauce choices: salsa, hot sauce, marinara, pesto, any good sauce

  • Cheese choices: feta, cheddar, provolone, Queso Fresco, parmesan, or anything you like.

For 12 muffins, beat about 9 eggs, add a splash of heavy cream, salt, pepper, seasoning salt, or any other seasonings you like.

Spray the muffin tin with baking spray. Put the protein in the bottom and then add any veggies, add any optional sauce, and add the cheese of choice. Then pour the egg mixture onto the top of the muffin cup.

Bake at 350 degrees until done. Make sure not to overcook. About 15-20 minutes.

These are good made ahead and warmed in the microwave!
