Whoa! These eggs were SO good! you can make them as spicy as you like, and if you don’t like spicy just leave out the jalapeños and cut down on the spices. I also stretched out the sausage veggie mixture, by saving some of it and used it the next day by cracking more eggs in it. Garnish sliced avocado, cilantro, and sour cream or Mexican Crema.
