My son LOVES this chicken and always asks me to make it for him! He calls it “That Chicken.” It’s just so tender and juicy! Don't overcook the chicken, or it will get rubbery—only about 1.5 minutes on the first side and 1 minute on the other side. I used the Trader Joe’s Everything But Elote seasoning, but it does have sugar. You wouldn’t be getting that much, though, over 2 pounds of chicken tenders. Here is a sugar-free Elote seasoning. I would add some Parmesan and a little sweetener to make it like Trader Joe’s
I made some French-style green beans with almonds and used the same pan that the chicken was fried in, and the recipe calls for bacon grease, so I think that made the green beans so good! Next, I put the cauliflower rice in the pan and added more bacon grease, butter, and seasoning salt. So good! I love this Green Giant cauliflower rice medley risotto. It has little bits of asparagus and mushrooms in it. So quick and easy.
Elote Chicken
2 lbs chicken tenders
2 Tablespoons Mayo
1 Tablespoon Trader Joe’s Everything Elote seasoning
1 Tablespoon Onion Salt
1 Tablespoon Parika
Cayenne Pepper to taste
Season the chicken with all the spices, then add the mayo. I didn’t think the recipe had enough mayonnaise, so I tripled it!
Fry in 3 Tablespoons of bacon grease. I think this is key, so try not to skip this. I did the tenderloins for about 1 1/2 minutes on the first side and then about a minute on the other side. You want it to be nice and juicy, not rubbery and overcooked.
Sprinkle with fresh cilantro (I only had dried) plus Cotija cheese.
