Keto Fajita Stuffed Chicken

These stuffed chicken breasts came out super good! I did change the recipe just a bit like I always seem to do. In addition to the onion and peppers I added two thinly sliced jalapeños, I also added some minced garlic to this mixture. I used bone-in breasts with skin instead of boneless skinless ones. This turned out great with the crispy skin and added flavor. I just put the chicken in the oven, and baked it at 350 degrees for about 30 minutes or until done, instead of pan frying them this was super easy and they turned out delicious! I served this with just some Birds Eye Spanish Cauliflower Rice and cucumber slices sprinkled with chili-lime Tajin. 🌶️

This recipe below has just about the same ingredients, but I think these nutrition facts are more correct. You can also put all the ingredients you use into a carb app just to be sure.
