There's more to St. Paddy's Day than green beer! Hurray - right? In trying to find some Irish-inspired meals, snacks, and appetizers we could serve up for an upcoming holiday gathering - I came across references to Irish Fish Pie. And, I was intrigued enough to make it as a dinner meal for just me and my husband. What I ended up with was probably a side-step from the traditional Irish pie (sweet potatoes?) but it was good and fit into my low-carb plan.
Fish Pie isn't much different from Shepherd's pie except for the protein. There are many variations of Fish Pie for the Keto diet - so, I just went with this one and modified it a tiny bit.
This recipe is 11.4 g of carbs - a bit high for me for dinner (I like to aim for 9 carbs) so, instead of 6 servings, I sliced it into 8 servings and froze a few servings for a few days later.
I used salmon and cod for the fish, plus some tiny smoked kippers I bought at Sprouts. There is also an option to add boiled eggs as a layer. I didn't try that, but I will probably add that next time I make this pie.
It was quite tasty and creamy and the fish was very tender.
